Roasted Asparagus

Ingredients

  • 2 pounds fresh asparagus
  • Good olive oil
  • Kosher salt, plus extra for sprinkling
  • Freshly ground black pepper

Directions

Preheat the oven to 400 degrees F.
Break off the tough ends of the asparagus and, if they're thick, peel them. Place the asparagus on a baking sheet, drizzle with olive oil, then toss to coat the asparagus completely. Spread the asparagus in a single layer and sprinkle liberally with salt and pepper. Roast the asparagus for 25 minutes, until tender but still crisp.

Chicken Cheesy Stuff

Ingredients:
1 Package of chicken breast
2 Cans of Cream of Chicken and Mushroom
1 Can of Cheddar Cheese
1/2 Onion
1 Container of sour cream
1 Bag of hash browns
2 Cups of shredded Colby and Monterrey Jack cheese
1 Pack of Ritz crackers
1 Stick of butter (melted)

Directions:

Dice chicken breast into bite sized pieces.
Combine hash browns, sour cream, can of cheddar cheese, two cans of cream of chicken and mushroom, chicken breast pieces and 2 cups of shredded cheese in large mixing bowl. Mix well.
Place the mixture in a deep baking dish.
Crush ritz crackers in package or in a plastic bag. Coat the top of the mixture with the crushed Ritz crackers. Pour the melted butter on top to coat.
